Easy Peasy Pancakes

Is there anything more satisfying than sitting down to a hearty plate of pancakes with all the trimmings on a day that isn't Shrove Tuesday? The beauty of pancakes in their base form is that you can play around with the ingredients to suit your mood; sugar, no sugar, fruit, cheese, chocolate, bacon bits (you hang up) - the possibilities are endless!



1 egg
4 heaped tablespoons of self-raising flour
2 tablespoons of sugar (I like caster with a vanilla pod submerged in the sugar pot)
Dash of baking powder
Any random ingredients you fancy cooking into the pancakes
Milk (if required)




Chuck all ingredients into a nutribullet and whizz (if you don't have one then sieve flour & baking powder into a bowl, add the sugar then make a well, crack in the egg and mix everything together. If required, add a little milk)

Peaches and Golden Syrup
Bananas and Nutella
Bacon and Maple Syrup
Lemon Curd and Mascarpone
Salted Caramel and Vanilla Ice Cream
Cheese, Ham and Leeks (maybe leave out the sugar for that one)
Strawberries and Chocolate Chips
Cinnamon and Apple

Top Tip: Pancakes are a great way to use up sour milk (it works - promise :)
