The Ultimate ‘Free From’ Birthday Cake

Cake Recipe

1 ½ cups gluten free self raising flour

cup cocoa

½ TSP bicarb

½ salt

1 cup sugar

½ cup oil (I use rapeseed)

1 cup water

2 TSP vanilla extract

2 tbsp apple cider vinegar

Icing sugar and dairy free butter for the filling. I'm terrible with measurements for butter icing as I just chuck it all in!

Method

Heat oven to 190 fan and grease 2 20cm tins

Sift flour, cocoa, bicarb, salt and sugar.

In a jug mix oil, water and vanilla.

Pour liquid into dry mix and stir.

Add vinegar and stir very gently and briefly.

Pour into tins and cook for 15-18 mins.

Cool on wire racks and sandwich with butter icing.

I doubled up on this as I made an excessively large 4 tier version!

I will be using this recipe again this year for her party - I'm planning to add little star sprinkles I found on Ethical Superstore that are free-from! Frankie x
